Four centuries of sfogliatella
- 17th centuryBorn in a convent
By the usual account, the nuns of the convent of Santa Rosa, on the Amalfi Coast, invented it.
- NaplesThe emblem of the city
The curly version, the riccia, became the pastry Naples is known for.
- Two kindsRiccia and frolla
Riccia has crisp, ridged layers; frolla has a smooth shortcrust shell. The filling is the same.
- Edgewater, every morningBy hand
Ours is the riccia, folded by hand and baked every morning.
How to eat it
Warm, on the day, with an espresso: the citrus in the filling and the bitterness of the coffee are made for each other. It shatters when you bite it, so take a plate. If it has been sitting, three or four minutes in a hot oven brings it back; the filling holds ricotta, so if you are keeping it for later, it goes in the fridge. The rest of the pastry case is explained in what to order at an Italian pastry case.
Pistacchio Panne e Caffè es un verdadero rincón de Nápoles que conquista desde el primer momento.
Who makes it
Chef Marco Giugliano, a Neapolitan-trained pastry chef, runs the kitchen. Everything on the counter is baked here every morning, before we open at 8:00 am (8:30 on Sunday).

Sfogliatella, answered
Where can I get sfogliatella in Miami?
At Pistacchio Pane e Caffè, 188 NE 23rd Street in Edgewater. It is baked every morning.
What is a sfogliatella?
A Neapolitan pastry shaped like a shell: dough stretched very thin, rolled, and pushed into ridged layers, filled with semolina cooked in milk, ricotta and candied citrus.
What is the difference between sfogliatella riccia and frolla?
Riccia has crisp, ridged layers; frolla has a smooth shortcrust shell. The filling is the same. Ours is the riccia.
Is a sfogliatella the same as a croissant?
No. A croissant is French: a crescent of laminated butter dough. A sfogliatella is from Naples: dough stretched very thin, rolled and shaped into a ridged shell, then filled with semolina cooked in milk, ricotta and candied citrus. Crisp outside, creamy inside.
