Which croissant is yours?
Three questions, one pastry.
Chocolate?
Pistachio and chocolate in one pastry. The green stripes give it away.
The crescent, with chocolate inside.
The French way to put chocolate in laminated dough: a rectangle, not a crescent.
A red-swirled croissant with sweet-tart berries and cream cheese.
Finished with sliced almonds on top.
Filled with our own pistachio cream. See the pistachio croissant
Chocolate croissant or pain au chocolat?
Same dough, same chocolate, different shape. In France, chocolate traditionally goes in the rectangle; we bake both.

- Rectangle
- Chocolate rolled inside

The croissant had crisp layers and a warm chocolate center that wasn't overly sweet.
Come early
Croissants are baked every morning, before we open at 8:00 am (8:30 on Sunday), and laminated pastry is at its best in the two hours after that. Taking some home? Keep them on the counter, not in the fridge, and three or four minutes in a hot oven brings the crunch back. For an office, they go on our breakfast trays; the catering guide has the numbers.
Who makes it
Chef Marco Giugliano, a Neapolitan-trained pastry chef, runs the kitchen. Everything on the counter is baked here every morning, before we open at 8:00 am (8:30 on Sunday).

The Italian breakfast
A cappuccino if it is still morning, an espresso if it is not. Breakfast in Italy is exactly that and nothing more.
