Gelato, waiting.

Eat it straight away, while the hot and the cold are still arguing: the espresso melts the edge of the gelato into a sweet pistachio coffee, and the middle stays cold.

Coffee or dessert?

Both, which is why it works at any hour. In the morning it is a coffee with ambitions; after lunch it is the dessert that also wakes you up. It is made in the cup, so it is one to have at the bakery rather than to wait for in a delivery bag: the gelato does not survive Miami heat.

How to eat it

Spoon first, while the gelato still holds its shape; drink what is left at the bottom of the cup, where espresso and melted pistachio have become one thing. The whole affair takes about five minutes, which is exactly as long as it should.
