Pick your filling
Three ways to fill it. Tap one.
Prosciutto cotto, Italy's cooked ham: mild, soft and the classic choice.
The caprese: tomato and mozzarella, the pairing named after Capri.
Tonno is tuna: the filling Italian lunch counters have always kept.
Not focaccia, not pinsa
Schiacciata means squashed: an Italian flatbread that comes out crisp with a salty top. Focaccia is thicker and softer; it is what our Pistacchione is built on. Pinsa is Rome's oval, made with three flours (pinsa in Miami). Ours is topped with sesame and filled like a sandwich.
Lunch in Edgewater
A schiacciata is a meal you can eat with one hand, at a table on 23rd Street or at your desk through Uber Eats and DoorDash. For an office, halved sandwiches are the savoury part of a good tray; the catering page has the details.
Three Italian breads, one oven
All three come out of our Edgewater kitchen. Each is a different dough doing a different job.
